Semiya payasam is one of the quick, easy, and delicious authentic Indian sweet made with vermicelli(semiya) and milk flavored with cardamom. We can use coconut milk also.
It is one of the main attractions during any Indian festival or for any special occasion. Semiya payasam can be prepared by anyone and it does not take much time. Within 30 minutes we can prepare this dish with easily available ingredients.
We can serve this payasam both hot, warm, or chilled.
This dish can be prepared with any type of vermicelli (whole wheat, maida, ragi, etc). But I prefer to use vermicelli made with whole wheat. You can use jaggery instead of sugar according to our taste.

INGREDIENTS. □1 liter of milk □1/2 liter of water □1 cup of vermicelli □1/2 cup of sugar □A pinch of salt □4 no's crushed cardamom/Elakkaya □15 no's cashew nuts □15 no's raisins □2 tablespoons of ghee

PREPARATION OF PAYASAM
1. Heat a heavy-bottomed pan, add 2 tablespoons of ghee, once it melts add cashew nuts and fry in low heat till it becomes golden yellow in color. Then add raisins saute for a second. Keep these aside for garnish.
2. Next roast the vermicelli in the same pan for 5 minutes in low heat, make sure that the semiya is stirring often. Roast till it turns golden brown color. Keep aside.
3. In a large Kadai boil milk and water together. Cook for 15 minutes in medium to high heat, keep stirring occasionally. Add sugar and salt.
4. To this add roasted vermicelli and mix well cook for 10 minutes, don't forget to stir occasionally. Sprinkle some cardamom powder and turn off the stove. Allow to rest for 20 minutes.
5. Garnish with fried cashews and raisins.
Serve payasam hot or warm.
NOTES
1. You can change the amount of sugar as per your preference.
2. Payasam getting thick as it cools down, if you want thin payasam add some hot milk or hot water accordingly.
3. You can use condensed milk to make this payasam rich and creamy texture. If you are adding condensed milk add sugar only if needed.
