INGREDIENTS

  • 1 cup of dry chickpeas.
  • 3 tablespoons of olive oil
  • 3 tablespoons of tahini [roasted white sesame seeds]
  • 2 tablespoons of lemon juice
  • 3 no's of garlic cloves
  • Salt as required
  • 1/2 cup of chickpeas stock
PREPARATION

Step 1: Take the chickpeas in a large bowl with plenty of water and soak overnight or atleast for 8 hours. After soaking, clean the chickpeas and cook with 3 cups of water and salt for 1 hour in medium heat. Drain the chickpeas, reserve 1 cup of chickpeas stock.

After completely cooled down, transfer the chickpeas to a blender or to a food processor. Add chopped garlic, lemon juice, tahini,  salt, and 1/2 cup of reserved stock and blend for 5 minutes or until creamy and smooth. If at any point the hummus appears very thick, then add the remaining stock and blend until combined.
Transfer to a bowl and drizzle with more olive oil. Let cool, then cover and chill.

NOTES
1. If you want to make the hummus without tahini, simply avoid it.
2. Another tip to make the smoothest hummus is to remove the skins of each chickpea.

Hummus can be served with pita bread or we can use it as a spread for sandwiches.

I hope you love this hummus...Thank you
