Red velvet cake is a beautiful bright red colored cake with cream cheese frosting.
It is made with maida, cocoa powder, vinegar, and buttermilk. This cake has a tangy taste that comes from the use of buttermilk, vinegar, and the cream cheese in the frosting. The velvety texture of the cake probably gave its name.

INGREDIENTS
- 1 1/4 cup of all-purpose flour/maida
- 3/4 cup of powdered sugar
- 1 tablespoon of cocoa powder
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 3/4 cup of butter milk[add 1 tablespoon of vinegar to3/4 cup of milk ]
- 3 tablespoons of oil
- 1 teaspoon of vanilla essence
- 1 teaspoon of red food color
- 2 pinches of salt
- 40 gms of unsalted butter[softened to room temperature]
- 1 tablespoon of vinegar
- 1/2 cup of full-fat cream cheese[softened to room temperature]
- 1 1/4 cup of whipping cream
- 3/4 cup of powdered sugar
- 1/2 teaspoon of vanilla essence
Step 5: Pour this batter into the prepared pan. Bake for 30 to 35 minutes at 180 degrees C or until a toothpick inserted in the center of the cake comes out clean. Remove the cake from the oven and allow cool completely.
FOR FROSTING
STEP 6: In a large mixing bowl take the whipping cream, cream cheese, and powdered sugar [The amount of sugar depends on the sweetness of the whipping cream]. Whip with an electric beater until stiff peaks form.
ASSEMBLING
STEP 7: With a long knife level the top of the cake split the cake horizontally into three layers.
STEP 8: Now take 2 tablespoons of whipped cream and spread on the cake table. Place one of the cake layers on the cake stand, spread with a layer of frosting, and smooth it.
Place the second layer of the cake on the top and repeat the same procedure.
Then place the third layer on the top and press gently with your palm. Take the cream and spread evenly all over the cake to cover it from top and sides. Decorate as desired.
NOTES
1. If you do not have an oven, you can bake this cake in a pressure cooker, you can follow the same steps.
2. Place the beater attachment and the bowl ( for whipping) into the refrigerator for 30 minutes before beating the whipping cream.
3. If you don't have the buttermilk, you can use homemade buttermilk. Mix 3/4 cup of milk with 2 tablespoons of lemon juice or white vinegar and mix well. Then let it sit for 5 minutes before using it.
4. Don't overmix your batter, and mix until the flour just combined with the batter. This will help you to make a moist and fluffy cake.
