Kabsa basically a traditional rice recipe from Saudi Arabia. This dish is very diverse and is famous in all gulf countries. We can prepare in different ways with different ingredients, and this is just one way. Here I am sharing chicken kabsa, but it can be made with lamb, beef, and fish.

 This is an easy method. Chicken and rice are cooked in an aromatic spice mix and garnish with fried cashew nuts, almonds, and raisins.

This recipe is very simple and we can surprise our friends and relatives on any special occasion.

One of the main elements in this recipe is the spice mix, you can buy it from the grocery store but here I used homemade version. 

Traditionally kabsa is prepared with skin-on chicken, but I used here skinless chicken, cut into large pieces.

CHICKEN KABSA INGREDIENTS.

  •   1.5 kg of chicken[you can use with or without skin].
  •   3 cups of rice.[Basmathi rice].
  •  4.5 cups of hot water.
  •  1 tablespoon of ginger paste.
  •  1 tablespoon of garlic paste.
  •  1 green chilly.
  •  3 medium-sized tomatoes.
  •  2 medium-sized onions.
  •  8-10 nos of peppercorns.
  •  6 nos of cardamom.
  •  6 nos of cloves.
  •  1 medium-sized cinnamon stick.
  •  2 nos of bay leaves.
  •  2 nos of dried lemons.
  •  1/2 cup of coriander leaves.
  •  2 carrots grated.
  •  1 chicken stock cube.
  •  2 tablespoons of butter/ghee.
  •  1 tablespoon of vegetable oil.
KABSA SPICE MIX [MASALA POWDER]

  • 1 tablespoon of coriander seeds
  • 4 no's of cardamom 
  • 6 no's of cloves
  • 1 medium-sized cinnamon stick.
  • 1 teaspoon of fennel seeds.



PREPARATION

KABSA MASALA POWDER.


To prepare the kabsa masala powder, grind all the ingredients to a fine powder.
We can store it in an airtight container for a few months.




HOW TO MAKE THE CHICKEN KABSA.


STEP 1: Wash thoroughly the rice and soak for 30 minutes. Then drain it.

STEP 2: Heat a deep bottomed pan with butter and oil, add cardamom, cloves, cinnamon stick, bay leaves and saute for a second. Then add sliced onions, ginger-garlic paste, and green chilly saute till slightly golden color. 

STEP 3: Next add 1 tablespoon of kabsa masala powder and mix well then add tomato paste and saute for 2 minutes. Add chicken pieces and salt and cook for 8 minutes. Now pour the hot water and cook on medium heat.

STEP 4: When chicken half-cooked, add the rice, coriander leaves, dried lemon, grated carrot, and the chicken stock cube, mix well. Cook on low heat for 30 minutes on low heat.

STEP 5: Finally garnish with fried cashews, almonds, and raisins.

Garnishing with fried nuts and raisins are absolutely essential for a delicious chicken kabsa. You can choose any nuts of your choice. 

WE CAN SERVE THIS DELICIOUS CHICKEN KABSA WITH A GULF FLAVOURED TOMATO SAUCE AND IT REALLY MAKES AN AMAZING COMBINATION.

KABSA SAUCE.

INGREDIENTS.

  • 2 tomatoes.
  • 3 green chilies.
  • 2 cloves of garlic.
  • 3 tablespoons of coriander leaves [chopped].
  • 1 teaspoon of vinegar.
  • salt as required.
PREPARATION

Blend all the ingredients in a blender. This chutney is the best combination for kabsa, mandi.
