CREAM OF CHICKEN SOUP RECIPE/CREAM OF CHICKEN SOUP /HOW TO MAKE CREAM OF CHICKEN SOUP

 Soups are simple to make, tasty, flavourful, and filling. Here I am sharing a homemade cream of chicken soup which gives a creamy and smooth finish.

CREAM OF CHICKEN SOUP RECIPE/CREAM OF CHICKEN SOUP /HOW TO MAKE CREAM OF CHICKEN SOUP






INGREDIENTS

FOR SOUP

  • 2 tablespoons of butter
  • 1 1/2 tablespoon of all-purpose flour.
  • 1 cup of  milk[ 250 ml, room temperature]
  • 1 cup of cooked chicken [diced or shredded]
  • 1 1/2 cup of chicken stock /broth.
  • 1 tablespoon of black pepper powder
  • 2 tablespoons of chopped coriander leaves
  • Salt as required
  • 5 tablespoons of fresh cream[room temperature]

FOR CHICKEN STOCK/BROTH

  • 4 pieces of chicken [with bone]
  • 1 medium-sized onion [chopped]
  • 1 carrot [chopped]
  • 10 no's of garlic cloves [chopped]
  • 2 cups of water
  • 2 tablespoons of peppercorns
  • Salt as required

PREPARATION

HOW TO MAKE CHICKEN STOCK/BROTH

Step 1: Boil the chicken pieces with onion, garlic cloves, carrot, peppercorns, salt, and water. Once boiled reduce the flame and cook for 10 minutes or until the chicken is cooked. Then drain the stock to a bowl. Shred and slice the cooked chicken.
 
HOW TO MAKE THE CHICKEN SOUP

Step 2: Heat a large pot over low heat, melt the butter, and add the all-purpose flour and saute constantly for a minute.

Step 3: To this add the milk slowly and stirring continuously. Bring it to boil, make the flame to medium heat. 

Step 4: Meanwhile, add 2 tablespoons of shredded chicken and 2 tablespoons of chicken stock in a blender to make a smooth paste. Add this paste to the pan and mix to combine. Then add the chicken stock, salt, diced chicken[cooked], and pepper powder. Stir occasionally to prevent the bottom from sticking. 

Step 5: Then reduce the flame to low and add the fresh cream and mix well. Top it with chopped coriander leaves. Switch off the heat.

Serve hot and add pepper powder if required...
